When you think about Filipino dishes the first would come into your mind would be Adobo. Adobo is cooked usually in soy sauce and vinegar with the addition of garlic, peppercorn, and dried bay leaves. It can be pork, beef, chicken, and even goat can be the main ingredient that is used to cook adobo. You can also use fish, seafood and other vegetables.

This is the base recipe for all recipes. There are various ways of cooking it, but for the simple ones, you just need to mix all the ingredients in the pot. The Pork, a little oil, Onion, Garlic, Pork, bay leaves, Soy sauce, and vinegar. Add Salt and peppercorn to taste, wait for to boil and when the pork is tender then it’s all set.

If you are craving for seafood you can make use of Galunggong (blue mackerel scad), for some provinces this dish is very common, since fish can easily be found and sold in an affordable price.

Yes, you can make adobo using peanut, this may not be the main course but serves as a snack. Legumes are best with this. Add some Red Chili (Siling Labuyo) if you want it a little bit spicy.

Haven’t really tried it, but they say it’s more flavorful. I bet cooking goat’s meat will take some time.
